Featuring NZ Horopito Mustard

You will need..

500g Pork Fillet
80g Mushrooms sliced
2 Tbsp @huntandgather_nz Horopito Mustard
1 Cup Cream
Handful Chives finely chopped
Salt and Pepper
Oil

- Cut your pork fillets into medallions and then using a meat tenderiser flatten the pork till it’s nice and thin. Set aside.

- Thinly slice your mushrooms and set aside.

- Place some oil and a pan and turn to a medium heat. Fry off your pork in batches until they are almost cooked through seasoning each piece and then set aside.

- In the same pan add a little more oil and then add your mushrooms. Sauté until they start to soften and then add in your mustard. Cook for a further few minutes and then add in your cream.

- Season the sauce with salt and pepper and add in half of the chives. Turn the heat to low and allow the sauce to simmer gently until it starts to thicken slightly.

- Once sauce has slightly thickened add your pork back into the pan and allow to simmer in the sauce for minute.

- To serve garnish with the remaining chives and enjoy!

NOTE: This can also be made with chicken or steak
