Featuring Hunt & Gather Hot Harissa Chutney

A flavour packed meal made using Hunt & Gather Hot Harissa Chutney. Served with Sumac onions, Yoghurt Dressing and Hummus.


Super easy and perfect for any night of the week.

You will need..

2 Small Eggplants cut into cubes
500g Beef Mince
1 Onion
1 Tsp Cumin
1/4 Tsp Chilli Powder (optional)
1/3 Cup Hunt & Gather Hot Harissa Chutney
1/4 Cup Water
Handful of Flat Leaf Parsley

Sumac Onions (1 sliced red onion with 1 Tsp Sumac and 2 Tbsp lemon juice)

Yoghurt Sauce (1/2 Cup Plain Yoghurt, 1 Tsp Cumin, 1 Tbsp lemon juice)

 

- Preheat oven to 180, chop your eggplant into cubes place on a baking tray and drizzle with some oil. Bake for 20mins until cooked.

- While eggplant is cooking make your sumac onions and yoghurt sauce. Set aside in fridge.

- Chop your brown onion into a small dice and place in a deep dish pan with some oil. Sauté until it starts to soften. Add in the mince and start to brown.

- Once the mince is almost cooked add in the cumin, harissa chutney and chilli powder. Cook for a min then add in the cooked eggplant.

- Add the water and some salt and pepper and cook for a further few minutes until all the flavours combine. Just before serving add the parsley and mix well. Check seasoning and adjust if needed.

- Serve with some steamed rice, garnish with the sumac onions and yoghurt sauce, hummus (optional) and coriander (optional)
