South Western Pulled Pork Burger Recipe

Smokey, Sweet and Savoury with a hint of spice that creates a marriage of Southern BBQ and Mexican flavours in this pulled pork!
Delicious in a burger or served over rice! And don’t forget the Guac!
You will need…
1.2-1.4 Kg Pork Shoulder
1 Onion finely sliced
2 Cloves Garlic finely sliced
2-3 Tbsp @huntandgather_nz Southwestern Rub
3 Tbsp Chipotle Sauce
2 Tbsp BBQ Sauce
2 Tbsp Lime Juice
1 1/4 Cup Chicken Stock
Salt and Pepper
- Preheat oven to 150 fan
- Cut your onion and garlic and set aside.
- Pat dry your pork with a paper towel the sprinkle over the southwestern seasoning and rub into the pork making sure it’s all covered.
- Place pork into an oven proof dish with a lid. Add the onions, garlic, sauces and stock. Season with some salt and pepper.
- Cover with a lid and place in the oven for 3 hours turning the pork half way through.
- Once pork is tender remove from oven and place on a plate. Shred the meat and add back into the juices. Mix well and check seasoning adjustment if needed.
- Serve in a burger or over rice with some Guac and Mangia and Enjoy
Serving Suggestion: In a burger with BBQ sauce, Mayo, cheese, guac with red onion in and lettuce.
