1. GIVE THE BBQ TIME TO HEAT UP
It takes about 30 minutes for a barbecue to fully heat up after being lit. It is important you wait for the temperature to be right to ensure even cooking.
  2. PREPARATION IS KEY
Get all your sides and salads sorted and in their serving dishes then cover and chill, that way you can really focus on what’s important: nailing the BBQ.
  3. SEASON EVERYTHING
Whether it’s veg or meat, it needs to be seasoned, either with a marinade or spice rub (Hot tip: Hunt & Gather Portuguese Rub is delicious with chicken).
  4. REST YOUR MEAT
Resting meat is a very important stage of cooking meat and without it meat will be tough. Once cooked, all meat will benefit from about 5-10 minutes ‘resting’ to allow reabsorption of juices.
  5. DON’T FORGET ABOUT YOUR GUESTS
The point of a barbecue is as much about the social occasion it is about the food. Make sure you’re having fun & mingling too!
